One of my personal favourite recipes. Roasted eggplant blended with slow cooked onion, garlic, dried mint & some subtle spices.
Drizzle with yoghurt & if you like, sprinkle with chopped walnuts for a bit of extra texture
A seriously versatile side dish that brings the flavour! Serve it warm with flatbread as a tasty starter, or pairs well with meat dishes - especially my Lamb Koftas - for something extra special. This flavour bomb is about to become you new favourite.

DEFROSTED: Bring to room temperature before serving. If you prefer it warm, transfer to a microwave-safe container & heat for 30 seconds to 1 minute, or until heated through.
FROZEN: Place the sealed bag in a jug of hot water until fully defrosted. Then, transfer to a microwave-safe container & heat for 30 seconds to 1 minute, or until heated through. Microwaves may vary, please adjust heating times if necessary.
Optional but recommended: Drizzle with some greek yoghurt. For some extra texture & flair top with some chopped walnuts, mint leaves & a pinch of paprika.

- Meals from Mr P's Kitchen will be hand delivered frozen to your door on your selected day by yours truly (yes I am a one man band just now). Frozen Meals are available for delivery Mon-Fri.
- Desserts & cookies by Sticky Delicious are cooked to order & delivered fresh on Thursdays & Fridays.
- You can select your preferred delivery day & time when you add to cart. While I can't guarantee your requested time due to route optimisation, I'll do my best to schedule your delivery for your convenience.
- If you won't be home to receive delivery just leave out an esky & I will drop your order off in the esky to keep it out of reach of the pesky bugs & weather.
