This Mexican inspired chicken is packed with flavour!

Tender achiote-marinated chicken, black beans, and corn, bound in a fire-roasted red pepper and achiote sauce.

It’s super versatile - serve it over rice or cauliflower rice, spoon into tacos with avocado, coriander, a squeeze of lime and some extra chilli, pile onto a baked potato, roll into a wrap, or toss through your favourite salad.

What is Achiote? It's a traditional Mexican spice blend made from annatto seeds, known for its vibrant red hue and warm, earthy flavour with subtle notes of pepper & nutmeg. Commonly used in Mexican and Central American cooking.

Heat in microwave for 2-4 minutes or until piping hot. Stirring halfway through.

Heat in microwave for 4-6 minutes or until piping hot. Stirring halfway through.

Microwaves may vary, please adjust cooking times if necessary, the important thing is to make sure it’s piping hot.

  • Meals from Mr P's Kitchen will be hand delivered frozen to your door on your selected day by yours truly (yes I am a one man band just now). Frozen Meals are available for delivery Mon-Fri.
  • Desserts & cookies by Sticky Delicious are cooked to order & delivered fresh on Thursdays & Fridays.
  • You can select your preferred delivery day & time when you add to cart. While I can't guarantee your requested time due to route optimisation, I'll do my best to schedule your delivery for your convenience.
  • If you won't be home to receive delivery just leave out an esky & I will drop your order off in the esky to keep it out of reach of the pesky bugs & weather.
