These Chicken Enchiladas are packed with flavour!
Tender achiote-marinated chicken, black beans, and corn, all wrapped in soft flour tortillas. They're smothered in a fire-roasted red pepper and achiote sauce, then topped with melty Oaxaca cheese for the perfect finish.
What is Achiote? It's a traditional Mexican spice blend made from annatto seeds, known for its vibrant red hue and warm, earthy flavour with subtle notes of pepper & nutmeg. Commonly used in Mexican and Central American cooking.
What is Oaxaca cheese? (pronounced wah-HAH-kah) is a creamy, stretchy cheese similar to mozzarella, known for its superb melt and mild, buttery flavour.

Pre heat oven to 180°C. Remove lid.
DEFROSTED: Cook for 35-45 minutes or until piping hot in the middle.
FROZEN: Cook for 45-55 minutes or until piping hot in the middle.
Ovens may vary, please adjust cooking times if necessary, the important thing is to make sure it’s piping hot and should be a nice golden brown on top.

- Meals from Mr P's Kitchen will be hand delivered frozen to your door on your selected day by yours truly (yes I am a one man band just now). Frozen Meals are available for delivery Mon-Fri.
- Desserts & cookies by Sticky Delicious are cooked to order & delivered fresh on Thursdays & Fridays.
- You can select your preferred delivery day & time when you add to cart. While I can't guarantee your requested time due to route optimisation, I'll do my best to schedule your delivery for your convenience.
- If you won't be home to receive delivery just leave out an esky & I will drop your order off in the esky to keep it out of reach of the pesky bugs & weather.
